what's for dinner

With the assorted vegetables from my csa, I sauteed the onions, then added the other veggies and some vegetable broth. I chopped fresh herbs from my garden and added them in. I cooked until all veggies were tender then pureed it with a stainless immersion blender. (I'm a fanatic about not putting plastic in anything hot.) To serve, I topped with more chopped herbs.

This soup is reminiscent of the soups we ate in Ireland. Add a freshly poured Guinness to complete the picture.
